OUR STORY

Hey there, welcome and thanks for exploring Niagara Cider. Our story starts with two boys born and raised in Niagara. We care about our community, sustainability and buying local, driven to offer you the best ciders that you can find. But this story is about more than us. It is about everyone who makes this cider possible, it is about our friends, farmers and people like you, who also have a passion for authenticity.

Niagara Cider is a reflection of its origin. With the superb growing conditions and iconic farms needed to make unique cider possible, Niagara continually impresses us with its produce and people.

With the tastes of Niagara showing in every mouthful, Niagara Cider Company’s No. 1 Dry Apple Cider is now available in the LCBO.

We love cider! Our first fermentations were inspired by the desire for an elusive beverage...dry, flavourful, unique. From the beginning it has been about playing, growing and making clean cider. We have learned that it’s a fine line to make a beverage that is both complex and highly drinkable. Sometimes you get it right and sometimes not so much, but after years of discoveries we have created something we want to share with you.

OUR CIDER PROCESS

STEP 1: PICK AND PRESS

Let’s start with a custom blend of handpicked Niagara heirloom apples.  Each variety of apple has its own flavour.  We choose apple varieties that lend minerality and balance, and then press them to extract maximum juice and flavour.  This creates the ‘must’, a rich, tart liquid to which…

STEP 2: YEAST

STEP 3: FERMENTATION

…the main event!  Fermentation takes place as the yeast does its work, converting sugar and leaving behind the flavour and minerality of Niagara Cider.  We ferment to dryness in stainless steel tanks at an optimal temperature and then we let it…

STEP 4: REST AND MAYBE SOAK

…rest in the case of our No. 1 Dry to develop increased complexity.  Depending on the product we then soak beautiful fruit, such as Niagara berries or Niagara peaches in the tank, until all of the fruit flavour has permeated the cider, at which point…

STEP 5: POST-FERMENTATION AND PACK

...the cider is lightly back sweetened with cane sugar, filtered for clarity, and then carbonated (yay, bubbles!).  Lastly, we package for you in cans, bottles and kegs!

WHO WE ARE

Hand-crafted with a proprietary blend of apples hand-picked from Niagara orchards, Niagara Cider is an ultra-premium beverage. Cold fermented in stainless steel tanks, it is fermented with specifically chosen white wine yeast that gives the cider a hint of Niagara’s vineyards amidst the orchards from where the apples are born.
